Holiday 2012: King Arthur ROCKS with Gifts for the Baker

It is no secret that I am in love with the King.
Hubby doesn’t mind one bit either. ‘Cause he knows that when I fool around with the King he gets lots and lots and lots of delicious baked yumminess.

I’m talking about King Arthur of course!
King Arthur Flour.
The best flour I have ever used. I order it in once a quarter and store it in the freezer.

When it came time to bake for the big open house party for the firemen King Arthur had my back. Oh yes he did! I was sent some of the wonderful baking mixes that the company has to make my party preparation both tasty and easy. What I LOVE about the mixes from King Arthur is the quality and the convenience. There is nothing listed on the side of the box that cannot be pronounced. It’s all good stuff. 

Today I’m going to show you what I did with the Old Fashioned Buttermilk Lemon Bundt Cake.
See how easy? You just need the mix, eggs, salt, milk and butter. Now to show you how versatile this mix is – I made cupcakes! Uh-huh, I never do what I’m supposed to, do I?

What can I say? It was for a big party. Cupcakes are handy little buggers.

Preheat the oven to 350°.

You mix the softened butter, salt and half of the cake mix until smoothish.

Then you add the eggs, one at a time and beat until fluffy.

Then you add in the milk and the remaining mix alternating between the two, beginning and ending with the milk.

I made a mixture of large and small cupcakes. Kids just LOVE small cupcakes!

I baked them for about 25 minutes. Just ’til a toothpick came out clean.

Now here is where things got interesting. Remember a bit ago I wrote about the Evil Force in my kitchen? Well….I WAS going to stuff these with caramel and top them with Italian meringue.

Yeah. The Evil Force had other ideas.

My Italian meringue collapsed – for the first time ever. I’ve made this frosting more times than I can count!
And when I brought the jar of caramel out of the ‘fridge – homemade mind you – I knocked it on the edge of my countertop and the bottom of the jar fell off.


Evil force, I’m tellin’ ya!
Fortunately it seems to be gone now.


So I ended up making a cream cheese frosting for the unstuffed cupcakes.

I topped them with Sparkling Sugar from King Arthur.

I will admit to erm, taste tasting one to make sure the Evil Force had not poisoned them.
It had not.
They were yummy! The lemon flavor was very present but not overpowering and the cake was moist and dense.
I might have taste tested two. Shhhhhhh.

These were snapped up like crazy at the party so I guess I was not the only one that liked them

Just so you are aware – the bundt cake kit does come with a lemon glaze so that if you are using it the way it is supposed to be used you will have double the lemon flavor. Mmmmm.
I will be back with more of King Arthur’s easy and delicious mixes.
