I received free samples of Blueberry Balsamic Vinegar and Coconut Balsamic Vinegar from Devo Olive Oil for my honest review.

As I mentioned in a previous post, July is National Ice Cream Month.
What a sacrifice to have to celebrate by eating ice cream.

I make a fair bit of ice cream using the goats’ milk and sometimes I like to enhance the vanilla I have made with a fresh berry topping. I don’t like to add a lot of sugar but I have learned that a bit of balsamic vinegar with just a little sugar can enhance the berry flavor and add rich dimension to my dessert.

Raspberries were the food for the Food Blogger’s Challenge this month so it all tied together beautifully!

This month I was sent Blueberry Balsamic Vinegar and Caribbean Coconut White Balsamic Vinegar. I must admit the coconut was a surprise; it’s not a flavor I would have expected in a vinegar and yet I found it quite tasty. Sadly, the hubby does not care for the taste of coconut so he could not share in my delicious topping. Happily that meant it was MINE, ALL MINE!

These toppings are very easy to make;

For the Raspberry Coconut:

1/3 cup fresh raspberries
1 1/2 TBS Caribbean Coconut White Balsamic Vinegar
1/2 tsp granulated sugar
1 TBS toasted coconut

For the Blueberry

1/3 cup fresh blueberries
1 1/2 TBS Blueberry Balsamic Vinegar
1/2 tsp granulated sugar

To make the toppings:

Put the berries in a bowl with the vinegar and sugar. Stir and let sit for at least half an hour.

To serve:

Put your ice cream in a bowl and pour the blueberry mixture on top.

Put your ice cream in a bowl, sprinkle half of the toasted coconut on top, add the berry mixture and top with the remaining coconut.

I didn’t have any of the blueberry as I don’t care for them but hubby LOVED his dessert. I was thrilled with my raspberry coconut. The combination was heaven in a bowl. A little sweet, a little tart and very creamy.

The vinegar mixes with the sugar and the berry juices to form a delightful syrup that adds to the ice cream experience. YUM!

    I have never heard of this…ever! But oh my gosh I love practically anything coconut flavored…and raspberries…okay and ice cream too! I’ve put raspberries on ice cream before but I definitely want to try your recipe!

    Very interesting combination. I would have never thought of using flavored balsamic vinegar. I love ice cream and these toppings are something I’ll try.

    I’m a hot fudge on my ice cream type of person, but my husband loves coconut. Never would have thought to add anything coconut flavor to ice cream though!
