I received a free sample of Chipotle Oil for my honest review.
The Food Blogger’s Challenge food this week was bacon.
My mind spun with the possibilities.
I mean it was BACON!
Who doesn’t love bacon? I must insert here that our butcher has THE BEST BACON IN THE WORLD! Meaty, smoky and not salty. I must ration myself or I eat too much of it.
So where did I go with it? Corn bread! I was make pork chops with apricots for dinner and I thought corn bread would be an excellent side. It was.
Bacon Chipotle Corn Bread
PRINT THIS RECIPE
1 1/2 cups cornmeal
1/2 cup all purpose flour
2 teaspoons baking powder
2 TBSP granulated sugar
1 tsp salt
1/2 tsp baking soda
1/4 cup Chipotle Olive Oil
1 cup milk
1/2 cup sour cream
6 pieced bacon, crisply fried and cut into pieces
Preheat the oven to 450°
Put all of the dry ingredients into a bowl. Whisk them together.
I wanted this cornbread to have a mild, underlying heat so I am using Chipotle Olive Oil. (You can substitute shortening, bacon fat, canola oil or olive oil.) Doesn’t the Chipotle Olive Oil from Devo Olive Oil Co. have a gorgeous color?
Add the eggs, milk, sour cream and Chipotle Olive Oil to the dry ingredients and stir just until mixed.
Gently stir in the bacon pieces. When I make this the next time I will cut the bacon into smaller pieces; about half the size I did this time.
When all of the bacon is stirred in, pour the batter into a greased 8″ x 8″ square pan or a 9″ round pan.
Bake in the preheated oven for about 20 – 25 minutes until golden brown. Mine took 20 minutes.
Remove from the oven and cool.
Cut into squares and serve.
It was nice and moist. The bacon went well with the corn flavor and the Chipotle Olive Oil added a mild smoky heat just like I wanted. It wasn’t pronounced but it was there.
It was an excellent accompaniment to the sweet/tart apricot raisin sauce on the pork chop.
