Strawberry Streusel Bundt Cake

  • 3 cups cake flour
  • 1 TBS baking powder
  • 3/4 tsp salt
  • 6 TBS unsalted butter at room temperature
  • 1 TBS pure vanilla extract
  • 2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup milk chocolate chips
  • 3 large eggs plus 4 large egg yolks at room temperature
  • 1 cup buttermilk at room temperature (or 1 cup milk with 1 TBS white vinegar)
  • For the Streusal:
  • 1/2 cup unsalted butter, melted
  • 2/3 cup all purpose flour
  • 1 cup brown sugar
  • 1 TBS cinnamon
  • pinch of salt
  • 1/3 cup strawberry jam (make sure it is jam, not jelly)
  • For the Ganache:
  • 1/4 cup heavy cream
  • 3/4 cup semi sweet chips
  • 1/2 tsp pure vanilla extract
  • pinch of salt
  • crushed candies in red or blue


  1. Preheat oven to 325°
  2. Butter and flour a 12 cup bundt pan.
  3. Make the steusel: mix the flour, sugar, cinnamon and salt. Add the melted butter and mix well. Set aside
  4. Make the cake:
  5. Whisk together the cake flour, baking powder and salt in a large bowl.
  6. Add the chopped chocolate rounds and toss them to coat.
  7. In a stand mixer with the paddle attached beat the butter and vanilla on medium speed until light and fluffy. Add the sugar and beat for about two minutes. Add the eggs and yolks one at a time, mixing well after each addition.
  8. Reduce speed to low and add flour and buttermilk in alternating additions, beginning and ending with the flour. Be careful to not overmix.
  9. Give the batter a couple of stirs to make sure everything has been incorporated.
  10. Add about a third of the batter to the prepared bundt pan and level it out.
  11. Sprinkle half of the streusel mixture over the batter.
  12. Drop the jam in small dollops over the streusel.
  13. Sprinkle the remaining streusel on top of the jam.
  14. Add the remaining cake batter to the pan. Smooth the batter.
  15. Bake in the preheated oven for 60 – 70 minutes until a toothpick comes out clean.
  16. Let the cake cool for 10 minutes and then remove it from the pan to cool completely on a wire rack.
  17. Make the ganache:
  18. Add the chips to a small bowl.
  19. Add the cream, vanilla and salt to a small saucepan. Bring just to a boil but do not boil.
  20. Pour the hot cream over the chips and let sit for about a minute.
  21. Stir the mixture until you have a smooth sauce.
  22. Drizzle the ganache over the cake. There will be extra – it tastes really good.
  23. Sprinkle the top of the ganache with SweetWorks candy crumbles
