I LOVE eggplant. This is the third year the hubby has tried to grow it for me. The first year was good but only two plants produced. Last year was better; we had enough to eat it for dinner many a night as summer progressed but never really had a big harvest.
This year has been excellent. The hubby did some research and made some improvements to how he managed the eggplant section of the garden. Apparently eggplant likes to be warm. I am down with that – I like to be warm too. So he made a little greenhouse like housing for it so it can be covered every night. We have been eating eggplant for dinner quite often and then the other night the first big harvest came in:

He is growing two different types. A Japanese and another. You can see why I am not a gardener.
It was over 3 1/2 pounds of eggplant.
And there were probably just as many that were still too small to pick.
I love to take the eggplant and make an eggplant tapenade that I can. It tastes so very good in the middle of winter when there is no eggplant to be had. I’ll have the recipe on the blog in the near future.
