OK we are not normal.
Never said we were.
No ham or leg of lamb for Easter dinner in the Broken Teepee household.
Uh-uh.
To tell you the truth when I took out the foil package I thought I had pork.
The lovely piece of ahi tuna was a bit of a surprise.
That will teach me to label things in my freezer now won’t it.
But that did not deter me from cooking my dinner, my way.
Oh no it did not.
I wanted apples and onions and I was going to have them!
Making caramelized onions is easy:
Thinly slice about 4 large onions – I use a mandoline to make sure they are evenly cut.
Heat a large saute pan over med heat and add 1 TBS of olive oil.
Toss in the onions and some salt.
Stir the onions around and cover for about three minutes until they start to really sweat.
Cook uncovered until they are VERY golden brown and quite sweet. About an hour.
This is about the only way I will eat onions.
When I want a different taste to them – for beef or lamb I will add some balsamic vinegar as they are cooking down.
To make apples and onions:
Core, peel and slice two apples.
Toss the apples into the caramelized onions as they are just about done.
Cook until the apples are just softening.
Since I had a GORGEOUS piece of sushi grade tuna I was not going to cook it to death. I had received two pieces in my order from Anderson Seafoods and the first piece we had eaten as sashimi. They had arrived fresh but the second piece had gone into the freezer. It came out looking just as beautiful as it was when it got here.
I took a small saute pan. I got it nice and HOT. I added a touch of olive oil. I kept the tuna simple since I would be topping it with the apples and onions – just some salt and pepper. I let it cook for a minute on each side just to sear it.
It was perfect – lightly cooked on the outside but still beautifully raw in the center. I served the tuna and apples over rice with a side of roasted snow peas for him, green beans (what else :p) for me.
The tuna tasted FRESH.
It had been in my freezer for three months.
IT TASTED FRESH!!!
The quality of the fish is so high – restaurant quality fish sent to your home. I cannot tell you what a treat this is.
Needless to say we gobbled it up. The apples and the onions were a delightful counterpoint to the tuna. I truly WAS NOT disappointed that I did not have pork on my plate.
I have started labeling though…it just makes sense. My memory is so very bad. heh
