I was sent my samples from Devo Olive Oil this month and Persian Lime Olive Oil was included. I tried a little and it was an explosion of flavor in my mouth. I immediately thought of making a chicken dish but I wondered if the fresh, bright flavor would carry through – I am happy to report it did! This dish was heavenly. The lime flavor was right in the forefront and absolutely delicious. I was sorry I didn’t make more so I could have leftovers for lunch today.
Persian Lime Chicken with Broccoli and Cashews on Jasmine Rice
6 oz chicken breast cut into small pieces
2 TBS Persian Lime Olive Oil
1 TBS Rice Wine Vinegar
1 1/2 cups broccoli florets
1/4 cup chopped salted cashews
2 cups prepared Jasmine rice
4 tsp tamari
salt and pepper

Put the cut up chicken in a bowl with a sprinkle of salt, the Persian Lime Olive Oil, the rice wine vinegar and a healthy dose of freshly ground pepper. Let this sit, stirring occasionally for about half an hour. While the chicken was marinating I was roasting my broccoli in a 350° oven as mine was frozen from the garden.
Heat a non-stick pan over med-high heat until it is hot. Add the chicken and its marinade to the pan. Let it sit until the chicken starts to brown – about 2 to 3 minutes. Then stir the chicken until it starts to cook through. Add the broccoli and let it warm through if you have cooked it from frozen or heat through if you are using fresh.
Serve over 1 cup of prepared Jasmine rice, top with the chopped cashews and drizzle with half of the tamari for each serving.
The lime flavor was prominent as I mentioned above and was yummy with the earthy/sweet broccoli. The nuts added a perfect bit of crunch. I think the next time I roast broccoli and cauliflower I am going to drizzle it with the lime olive oil. I think it will be yummy!
