OK, OK – I do get the irony in BAKING for the firemen with a NO BAKE treat. But hey – it was DELICIOUS and it was easy to make. Sometimes a girl has to take a shortcut, ya know? I also sent along banana bread which will show up in another post. The meetings have been very well attended lately – YAY – and the men are hungry!
The No Bake Key Lime Cheesecake Bars from Plentiful Pantry were a cinch to make. Inside the adorable package are two silver envelopes; one contains the chocolate cookie crust, the other contains the cheesecake mix. First you line an 8″ x 8″ pan with parchment, plastic wrap or foil. I had foil.
Then you melt butter and add it to the cookie crumbs
Then you mix it all up and press the mixture into the bottom of the pan
Next up – the cheesecake mixture! Into a bowl goes two packages of cream cheese, a cup of water, lemon juice and the mix from the second envelope.
You mix it until it gets light and fluffy and trust me, it gets light and fluffy! Then you put it on top of the cookie crust
and spread it all around. Then it goes in the refrigerator for at least an hour to set.
The directions say you can then choose to decorate the top with grated lime zest or chocolate shavings.

Now I took a photo of the platter I sent into the firemen with the cheesecake all cut up nice and pretty and the banana bread on the other side but the camera ate it. I suppose that means it must have looked pretty good.
My camera and I are not getting along lately. I am not sure what this bodes for the future. The bars were very easy to cut as long as you remember to clean off the knife between each section.
The firemen enjoyed the No Bake Key Lime Cheesecake Bars. Erm, so did I. I snitched one. Don’t tell, ‘k? They were creamy with a nice hint of lime. The cookie crust was perfectly crunchy.
