This recipe was inspired by a free bag of Simply Potatoes Hash Browns. I also received a gift card to facilitate the recipe creation.
Two things conspire for me to be bringing you this recipe today; I love potatoes and the husband does not and I am often left to my own devices for dinner while he is out at various meetings. I must admit that I tend to not cook for myself so when I have something like Simply Potatoes in the refrigerator it sparks my desire to make myself a meal rather than have cheese and crackers for dinner. I must admit that had I my druthers I would have really liked to have a bag o’mashed potatoes but finding them was not for me the day I went shopping. I ended up with Shredded Hash Browns which led me to create a really yummy, yet simple hash made from leftovers in my ‘fridge. It’s a recipe that is easily manipulated to accommodate whatever you might have sitting in your refrigerator and can be embellished to suit your taste.
Gotta love a recipe like that.
I made it for one but obviously this is also the type of recipe that can be expanded to the nth degree to feed a houseful. Another bonus! So I give you….
Hash for One
1 cup Simply Potatoes Shredded Hash Browns
1/2 tsp butter
1/2 tsp olive oil
1/4 cup leftover meat – I used ham
2 TBSP shredded cheese – I used cheddar
Dollop of sour cream
salt and pepper to taste
Place a saute pan over med-high heat and add the butter and olive oil. After the butter melts and you make sure to swirl the mix around the pan, add the Simply Potatoes Shredded Hash Browns. Reduce the heat to medium. Let the potatoes cook until they start to get some color on them, about 5 – 7 minutes.
Add the meat to the pan and let it cook until heated through and the potatoes are starting to crisp a bit. Another 5 minutes. Sprinkle the cheese over the top.
Remove from heat, cover and let sit for about a minute until the cheese melts. Add salt and pepper to taste.
Serve in a bowl or on a plate with a dollop of sour cream on top. It made a perfect dinner for just myself – I really enjoyed it! The sour cream mixed in and made a lovely sauce as it mingled with the melted cheese. If I had been feeling “healthy” I could have tossed in some broccoli or leftover green beans. As it was I ate some pickled cauliflower. Weird I know, but it made me happy.
So you can see just how easy it is to adjust this recipe to suit YOUR needs. I love having Simply Potatoes on hand because it just makes things a bit easier for me when I’m craving potatoes. I don’t understand hubby not liking them – that does not make sense to me. But then he does not understand my not liking carrots….
