I love these.
They take some time to get them right but they are well worth it.
I usually make them when I have a roast in the oven or I am roasting a chicken.
They really end up tasting like fried potatoes.
You will need:
6 small potatoes
3 TBS olive oil + 1 tsp
1 tsp garlic powder
1 tsp salt
pepper to taste
Preheat oven to 350*
Peel the potatoes, rinse, dry and cut into wedges. Put them in a bowl.
Add the 3 TBS olive oil, garlic powder, salt and pepper.
Mix thoroughly and add the potatoes to an 8″ baking dish.
Put in the preheated oven.
After 45 minutes turn the potatoes. They will look like this.
Turn the heat up to 400*
Cook for about half an hour to 45 minutes longer until the potatoes are well browned.
They will look like this.
They will be crispy and taste like heaven.
