I’ve written in the past about how much I love Zaycon. (You can read here about my first delivery of their chicken breasts.) We have been butchering our own chickens here because I’ve really been disappointed with the taste of chicken that I’d been buying in the store. But then came Zaycon and suddenly chicken tasted the like the bird I remembered as a child. It actually had a flavor! We still butcher some birds so I have whole birds and legs and thighs but not nearly as many – which is a good thing as it’s a long, hard day. With these amazing chicken breasts in the freezer I know I have go-to meat for any number of quick dinners.
To make meal preparation even easier Zaycon has teamed up with Chicken Soup for the Soul and is offering their new line of food products from chicken broth to barbecue sauce and more. I was sent a few to try out along with some more delicious Zaycon chicken. The Chicken Soup for the Soul products are all packaged in sustainable glass or Tetra Pak containers. They were created by Chef John Doherty the former executive chef of the Waldorf Astoria. You can find lots of recipes on the Chicken Soup for the Soul website.
The breasts come in a large box and in the box are bags of joined chicken breasts. They are HUGE. I split them in half and then wrap them up to freeze. Each half weighs around a pound so it more than feeds us; I always have enough left over for his lunch the next day.
Since I had all of this great chicken and a great meal builder from Chicken Soup for the Soul I was ready to make dinner. All I needed was rice and a vegetable. I put the rice on to cook and then I started the rest of dinner.
I cut up one chicken breast into bite sized cubes.
I put a large saute pan over medium high heat and added a tablespoon of olive oil. I then added the chicken and sprinkled it with salt. I let it cook for a couple of minutes and then I stirred it around and let it cook a couple of more minutes until it was lightly browned on each side.
It was time to add the Sesame Ginger Meal Builder! Since I only used one pound of chicken I only used half the jar.
I added it to the pan and lowered the heat. I covered the pan and let it cook for 5 minutes. After that I added the green beans, covered the pan again and let it go another 5 minutes. That easy!
I served it on top of the rice with a little bit of chopped pickled ginger for an accent. We both enjoyed this very much, in fact the hubby went back for seconds and I might have seen thirds.
His plate was about as clean as it could get. I think I am going to use the second half of the bottle with fish. It’s a flavor combination that will pair well with many proteins and could even be used with just vegetables for a vegetarian meal.
